How to prepare Sambar
Sambar is a vegetable stew made out of tamrind juice and vegetables like Brinjal, Carrot, Lady's finger or okra, onions, Cucumber. You can add any one, two vegetables or all according to your taste. Here I used Brinjal Lady's Finger, onion and tomato.
Preparations time: 30 minutes
Serves: 4 persons
Ingredients:
Tur Dal or Moong dal : 1 cup
Tamrind: small ball ( soaked in water)
Onion: 1
Tomato:1
Brinjal:2
Lady's Finger:2
Mustard seeds: 1/2tsp
Cumin seeds: 1/2 tsp
Red chillies: 2
Green chillies:4
Asaefotida: small pinch
Turmeric: small pinch
Sambar Powder: 3spoons
Oil: 3 tsp
Coriander to garnish.
Few curry leaves.
Few curry leaves.
Salt to taste.
Procedure:
Pressure cook dal or Cook dal in heavy bottmed vessel till becomes soft. Mash dal with a spoon .
Take a kadai add 2 tsp oil. Add onions, brinjal and Lady's finger. Stir it occassionally and let it fry for few minutes. Now add this to the dal.
Squeeze tamrind juice and add it to dal.
Now add tomatoes, green chillies, turmeric, Sambar powder and salt.
Let it boil for 10 minutes .
Seasoning:
Take a kadai with 1 tsp oil. Add mustard seeds when it splutters add cumin seeds, green chillies, asafoetida and curry leaves.
Add this seasoning to sambar and garnish with coriander.
Serve hot with steamed rice or Idli along with ghee.
