Bittergourd Peanut Curry
Bitter gourd is a healthy vegetable particularly for diabetic people. Though it is good for health beacuase of its bitter taste most people don't like this. (even I don't like this :)). So I thought of an alternative to lower the bitter taste in the bitter gourd curry. I added below ingredients and it has got a mix of bitter, sweet, spicy taste. Now this curry can be enjoyed even by kids.
Preparation time: 30 minutes
Serves 4 persons.
Bitter gourd : 4 (sliced into circles)
Peanuts: 1 spoon
Urad dal: 1 spoon
Split Bengal gram: 1 spoon
Mustard seeds: 1/4 spoon
Tamrind: Small piece
Jaggery: Small piece
Green chilli: 2
Red chilli:2
Salt to taste
oil: 4 spoons
Procedure:
First sprinkle some salt on bitter gourd pieces and keep it aside for five minutes. Squeeze juice from bitter gourd.
Heat oil in a pan and add mustard seeds when it splutter add peanuts, bengal gram, urad dal fry till it turns brown now add green chillies, red chillies, tamrind and jaggery fry for few minutes remove it from the pan and let it cool down. Powder these ingredients in a mixer grinder.
Heat oil in a pan add Bitter gourd piece and saute it till it becomes soft. Now add already prepared powder and salt to it. If you want the curry to be wet add some water to it (I added some water to it) or you can leave it like that for a dry curry. Keep it on flame for few minutes and you take it into a serving bowl.
Serve hot with Steamed Rice and added ghee.
