How to prepare Nimki

Nimki  prepared with all purpose flour and redchilli powder. It takes less time and easy to prepare. This crispy snack can enjoyed at evening time with tea. Preparation time: 45 minutes. Ingredients: All purpose Flour (Maida): 1 cup Red chilli powder: 1tsp Oil : to deep fry. Salt to taste. Procedure: Take all purpose flour in a bowl. Add salt and red chilli powder. Prepare a dough mixing with water. Make small balls and roll it into a round disc on a flat surface with rolling pin. Cut that with a knife into small pieces like shown in the below image. Heat oil in a kadai and deep fry the above pieces. This can be stored in air tight container upto 3 weeks.

Aloo methi or Potato Fenugreek Leaves curry

Aloo methi or potato Fenugreek Leaves curry is a delicious recipe prepared with potato, Fenugreek Leaves and green chillies. Potato is a vegetable enjoyed by most people when combined with Fenugreek leaves which  is rich in nutrients and healthy, it gives a yummy aromatic and delicious taste. Preparation time : 30 minutes Serves : 3 people Ingredients: Potato: 4 ( sliced and boiled) Fenugreek Leaves: 1 bunch ( finely chopped) Mustard seeds: 1/2 tsp Split Bengal gram: 1/2 tsp Urad dal : 1/2 tsp Cumin seeds:1/2 tsp Red chilly: 1 Green chillies: 5 ( finely chopped) Oil: 3tsp Salt to taste Procedure: Slice potaoes and boil them till it becomes tender.Let it cool and remove the skin on the boiled potatoes. Take Fenugreek leaves in a bowl,sprinkle some salt and keep it aside. How to prepare Sambar Powder

Sambar powder prepared at home brings a different aroma and makes sambar more tasty. Here is the process to prepare sambar powder at home by yourself. Ingredients: Tur Dal: 1 cup Urad Dal: 1 cup Bengal Gram: 1/2 cup Coriander seeds: 1 1/2 cup Fenugreek seeds: 1/2 cup Black Pepper: 1/2 cup Cumin seeds: 1/2 cup Red Chillies: 2 cups Take a kadia and dry roast all the ingredients one by one till golden brown. Let it cool and grind it into a fine powder. This powder can be stored in air tight container and used while preparing sambar. In my next post I will share  "How To Prepare Sambar Powder".

Capsicum Tomato Curry

Capsicum when combined with tomato  gives a tangy and spicy taste which is delicious. This is prepared with minimum ingredients which makes it  easy to prepare when we are in a hurry Preparation Time: 20 minutes Serves : 3 people. Ingredients: Capsicum: 4 (chopped into small pieces) Tomato: 1 (finely chopped) Green chillies: 2 Garam masala: small pinch Mustard seeds:  1 tsp Cumin seeds: 1tsp Split Bengal gram: 1tsp Urad dal: 1 tsp Red chillies: 1 Asafoetida: pinch Oil: 4 tsp Red chilli powder: 1/2 tsp Salt to taste. Procedure: Heat oil in a Kadai add mustard seeds let it splutter then add split bengal gram, urad dal, cumin seeds, red chiily and asafoetida, saute it  and add capsicum pieces. Leave it for 2 minutes stirring occassionally. Simple Crochet scarf

Scarf  used to wrap around the neck or over the head used for warmth in winter or for fashion. This is a  crochet scarf prepared with a crochet needle and wool. The design is very simple and can be done in an hour or 2. I have used 5.5mm crochet needle for this scarf. 4 inch wide Scarf: First row: 15 chains. Second row: 1chain and single crochet in  each chain Third row: 3 chains and single crochet in third chain Fourth row: 3 chains and single crochet in scallop. Continue the same pattern till the desired length you need. Last row: Do single crochet in  each chain to finish the scarf.

Vankaya kothimeera karam or Brinjal coriander curry

Brinjal is the king of vegetables and loved by most of the people. Brinjal can be cooked in different varieties and is very tasty to eat with rice or roti. This curry is simple with minimum ingredients and easy to prepare. Preparation Time: 20 minutes. Serves: 3 people. Ingredients: Brinjal:  1/4 kg ( Sliced length wise) Coriander Leaves: 1 bunch Green Chillies: 6 ( Can add 1 0r 2 if you eat spicy) Ginger: Small Piece Oil: 3 spoons Salt to taste Pinch of Tuermeric powder Asafoetida: small pinch Procedure: Take green chillies, coriander, ginger and prepare a fine paste. Heat oil in a kadia, add brinjal pieces, turmeric powder, asafoetida stir for 2 minutes and add salt. Cook in medium flame till brinjal becomes tender. Now add the green chilli coriander paste and cook for few minutes stirring in the middle. Take curry into serving bowl and serve with steamed rice along with ghee. Bittergourd Peanut Curry

Bitter gourd is a healthy vegetable particularly for diabetic people. Though it is good for health beacuase of its bitter taste most people don't like this. (even I don't like this :)). So I thought of an alternative to lower the bitter taste in the bitter gourd curry. I added below ingredients and  it has got a mix of bitter, sweet, spicy taste. Now this curry can be enjoyed even by kids. Preparation time: 30 minutes Serves 4 persons. Bitter gourd : 4 (sliced into circles) Peanuts: 1 spoon Urad dal: 1 spoon Split Bengal gram: 1 spoon Mustard seeds: 1/4 spoon Tamrind: Small piece Jaggery: Small piece Green chilli: 2 Red chilli:2 Salt to taste oil: 4 spoons Procedure: First sprinkle some salt on bitter gourd pieces and keep it aside for five minutes.
